Gazpacho Ice Cream (from Top Chef LV?)

I'm very tempted to try making the Gazpacho Ice Cream (using an ice cream maker instead of liquid nitrogen). Michael V. gave a demo in his video on bravo.com Has anyone tried this? Better recipes? Tips?
