Doughnut Making Help....Please

Hi,

I'm a caterer and am interested in making fresh doughnuts for a party I'm doing in September. I will escentially be making the doughnuts on demand as people request them that day.

How can I prepare the dough in advance? Can I just refrigerate the risen dough and then fry it off as needed?

Please help me..

    I wouldn't freeze the dough beforehand. I was just make the dough a couple of hours before you start frying them up on demand. Roll out the dough about 1/2 hour before you plan on starting to deep fry them.
