Espositos Pork Store on 9th avenue and 38th street has a good selection. i am a big fan of their chicken hot sausage. good prices too.
Agreed - Esposito's is my favorite, especially the broccoli rabe and mozzarella pork sausage!
Faicco's Pork Store and Florence Meat Market in West Village have great Italian pork sausage

Pino on Sullivan Street in Soho makes his own hot dogs as does Yorkville Packing House on 2nd Avenue and 81 Street (assuming it's still in business.)
grazin' angus (at the union square greenmarket on fridays and maybe saturdays, i'm not sure) makes great hot dogs with lamb casings.
Second this and also want to suggest Flying Pigs at the market. I sometimes pick up some franks as well as some brats and chorizo. Really great stuff. Eat well!JeremyEG
