ISO Homemade Almond Extract Recipe
Hmm...I thought that the kernels of apricots, peaches, and even sweet almonds had traces of cyanide in them. I could be wrong...
BUT, I, too, have been looking for an almond extract recipe. I took some ground almonds and mixed it with vodka (or grain alcohol--no other competing flavors) about a month ago and I'm awaiting the results. So far, not bad, but not done, I think...I plan to filter out the almonds at some point. Or, maybe I'll just leave 'em in and let the sediment stay on the bottom/scoop out the separated extract... I heard about the cyanide too but apparently if you roast the almond seeds first, it'll be destroyed by the heat. I have nothing to support it, just random readings on the internet.
I know that with chinese almond dessert soup, it's ground with raw rice to help reduce the cyanide (something to that effect but don't quote me on it).
