singapore chili crab

craving it. all the recs from past threads had a lot of ifs ands and buts. nothing definitively super good and authentic.

any new recs for singapore style chili crab besides belacan?

    I don't think you'll find a reasonable version. I think there are chefs here who have the skills to do great crustacean dishes, but the problem lies in the type of crab that they use in Singaporean chilli crab - it's usually been described as a "mud crab," that's imported from the Indian Ocean region.

        you could go to century city for the one at rock sugar, but i don't know how great it is

          Probably sweet... they're true to their name! But if you decide to go, it's a fabulous venue to try out with some tasty dishes (not everything though)... just don't expect authentic. The spareribs are gorgeous. Bring a date or a friend who likes cool environments.
