Home-aged steak tastes like chicken
I've tried fridge-aging steak using the standard methods prescribed on this board and elsewhere. I'm typically aging for 2-3 days with prime boneless NY strips.
While I do notice a texture upgrade, the two times I have tried it my steaks have had a "chickeny" flavor. I don't really know how else to describe it. It's not good. My wife refused to eat it both times, but I ate it and it didn't make me sick or anything.
Any ideas?
