Got Leftover Chicken Broth

Hi, I've never posted here before (not much of a cook) but I thought I'd try! I have some leftover chicken broth that I have no idea what to do with. Like I said I'm not much of a cook! If you have a SIMPLE, idiot-proof recipe that uses chicken broth and a small number of other ingredients -- I would be most grateful. I have about a 1/2 quart of chicken broth.

  1. If you don't know what to do with it now, pour it into an ice cube tray, freeze, then pop the cubes into a Zip-Loc bag. Then you can take out and use when you need a little or a lot. Should keep 3-6 months.

      Thank you for the suggestion -- unfortunately I have a VERY small freezer (full of dumplings and such) and haven't got any more room! I will save the tip for the next time.

        If you pour it into a ziploc bag & let all the air out of the bag, you should be able to lie it flat to freeze. It takes no room at all when it is flat but the ice cubes do take some room.

    2. Open 1 package of frozen mixed vegetables (e.g., corn, peas, carrots).

      Add to chicken broth.

      Bring to a gentle boil.

      Season with salt and pepper to taste.

      Voila! Vegetable soup.

      1. One simple thing to do with it is to cook about 1 1/4 cup of rice in it. It will certainly enhance your rice.
