Long Liquid Lunch on Wednesday/Thursday in Manhattan!

I am revisiting Manhattan for a few days with my wife for our 10th wedding anniversary at the end of September.
We love our food and wine and since we will be "child-free" we want to spend a long lunch enjoying things the way we used to - uncomplicated!
We would like some restaurant with a good buzz, food and wine where you don't feel like you have to leave by 3/4/5!
Recommendations would be much appreciated.
