Pizza crust help, please
Does anyone make a pizza with a fluffy, bubbly, yeasty, slightly sweet crust?
Definitely no cracker crust.
Definitely no corn meal based/corn bread crust.
Please?
In Oak Park w/o a car, so something accessible by public trans please.













Something like Pompei? The old-fashioned bakery pizzas?

I'd like to see a Pompei pizza , but I can't seem to find any pics except for some phenomenal looking ones from Pompeii, Italy. -Seeing those pics was like rubbing salt in a wound.
And when you say, "old-fashioned bakery pizzas," what do you mean?

It started out on Taylor Street, the epicenter of Italian in Chicago several decades back. Bakery pizza is baked on a rectangular sheet pan, basically a large focaccia, that bakeries on Taylor sold by the slice as an adjunct to their other baked goods. More of a foccacia with cheese and sometimes sauce than a purpose-built pizza.

My husband (who knows what I am looking for in a pizza) has had Pompei and says that it doesn't fit the bill. Says it's too thin. He also said something about it being "vomity." I chose not to ask him to elaborate.

But I don't think there is an easy way to get there without a car.
My fav pizza place is Jimmy's on Madison in Forest Park, but it's more of the crispy cracker crust.

Just saw the pic of the wood fired pizza at the Trattoria 225 website. It looks pretty good! The wording on the menu doesn't sound like what I'm looking for though. "Our thin crust 11" pizza is made w/organic whole wheat flour." I'm not sure, but a whole wheat flour crust might not yield what I'm looking for. BUT, I think we'll have to try it none-the-less.
Looked at the reviews on yelp of Freddy's. it's not always easy to yield useful, descriptive info from yelpers. But I did catch the words, "tough" and "dry." That won't work.
