What to do with lots of yellow lentils?

Any recipes or suggestions appreciated! It has to be vegetarian, and my husband dislilkes Indian. I figured a soup or stew of some kind but I'm coming up blank.

  1. saute a mirepoix, can of tomatoes, salt and pepper, cook in the crock pot or stove top for a great lentil soup.

    bean burgers...

    maybe cook them and make a cold salsa with them.... or make it middle eastern with parsley, mint and tomatoes...

    1. Check out the recipe for "monastery lentils" on recipezaar. Most delicious and IIRC, vegetarian too. adam

      1. I like honey-baked lentils. It's basically 2:1 water to lentils; for 1 cup lentils, I add 1 T. honey, 2T soy sauce, 2 T oil, 1 clove garlic and any spices. I usually use a curry blend, but dill works nicely, too, and salt and pepper. Put everything in a casserole dish, cover and bake at 350 for about 45 min.. I add carrots and red peppers sometimes. It's a versatile dish and goes well with baked potatoes, rice or flatbread.
