What to do with lots of yellow lentils?

Any recipes or suggestions appreciated! It has to be vegetarian, and my husband dislilkes Indian. I figured a soup or stew of some kind but I'm coming up blank.

    I like honey-baked lentils. It's basically 2:1 water to lentils; for 1 cup lentils, I add 1 T. honey, 2T soy sauce, 2 T oil, 1 clove garlic and any spices. I usually use a curry blend, but dill works nicely, too, and salt and pepper. Put everything in a casserole dish, cover and bake at 350 for about 45 min.. I add carrots and red peppers sometimes. It's a versatile dish and goes well with baked potatoes, rice or flatbread.

      Check out the recipe for "monastery lentils" on recipezaar. Most delicious and IIRC, vegetarian too. adam

        saute a mirepoix, can of tomatoes, salt and pepper, cook in the crock pot or stove top for a great lentil soup.

        bean burgers...

        maybe cook them and make a cold salsa with them.... or make it middle eastern with parsley, mint and tomatoes...
