        <content>A few years ago I was introduced to the wonderful Hatch chile and became an instant fan. I posted this extremely long thread with everything I could find about them.

Tweak this using 1/2 the sugar, stock and wine.

My favorite quick and easy uses

- Great on pizza. Just add to your favorite slice
- Quesadilla with Hatch chile
- Tortilla spread with cream cheese, hatch chiles and rolled
- Green Chile guacamole (Mash together cream cheese, roasted chile, garlic, cilantro to consistency of guacamole. The more pepper you can spare, the better. Nice garlicky taste) 

It&#8217;s the season &#8230; RIGHT NOW!!!

      <content>I roast them, then freeze on a cookie sheet, then into a ziploc bag. They're great in scrambled eggs and omelets with onions, too.</content>

      <content>Hatch Chiles are best purchased on a road trip to Burque or Las Cruces in September, with stops at the Owl cafe in San Antonito, the Frontier, and a trip to the Chile Works in Los Alamos for a Breakfast burrito.

The easiest, and one of the best ways to do green chile is a Green Chile Cheeseburger,  Ground chuck, salt an peppered, slice of cheddar cheese,a nd a roasted, peeled green chile on a toasted bun.  Maybe  a little mayo, but no ketchup or mustard.

      <content>Your recent post on the Las Cruces thread and the recent question about Blake's Lotaburger raise the question - are you headed to Hatch for this year's chile festival?  I haven't been in years, but as every Labor Day approaches I try to figure out a way to get there.

Loves me some chiles.  Down to the last package of Hatch greens, but the harvest is upon us.  I just wish I could find a ristra that's made for cooking instead of those stupid decorative lacquered ones.  It's the perfect way to dry and store red chile.</content>
