Any ideas for leftover ceviche?

Had a dinner party last night and a friend made an enormous bowl of ceviche with halibut, sea bass & tilapia. It was delicious, but now I have A LOT of leftovers. Can't stand the thought of wasting it, but don't really want to eat ceviche again today. I am thinking I could make something for dinner tonight with it, but maybe also make something to freeze and eat later. There is so much leftover! It is a classic ceviche with cilantro, onion, garlic & jalapeno. I would appreciate any ideas or recipes. Thanks!

  1. Fry or nuke it and make fish tacos. Fry w/ rice for burritos.

      1. Ceviche is perfect added to the top of otherwise plain paella before it goes in the oven.

          Hmm, I've never baked paella, only stove top or over a fire.
          In an omelet? Quiche? On pizza? Wow, I wish I had your problem.

        2. OK, I ended up sauteeing some onions and red peppers and tomato and adding the ceviche and serving over rice. Not bad, but the fish was a little mushy. I still have more left. I may try making a thai style coconut soup with it. I'm thinking of adding it to a coconut & lemongrass base....

            it fries up really well. it won't be any good after tomorrow because the texture will be total mush. if you're adding it to soup, do it at the very last minute at very low heat.

            Add to ricotta cheese and stuff in shells
            Plenty of cheese topping off both. Yum, you lucky CH!
