How long does gazpacho last?

Hi all -- I am planning on making a peach and tomato gazpacho:

How long do you think it will keep in the fridge? I am planning on making it tonight (Friday) or tomorrow, but I want to save some for my boyfriend, who is out of town until Tuesday. I know I could freeze it, but I think it would taste better fresh. But maybe I'm wrong...?

  1. I made Gazpacho with ripe tomatoes from my garden on Monday and it tasted much better today (Friday). If it separates a bit, just stir or chuck in the blender again. I made mine with cucumber, red pepper and sherry vinegar.

      thanks! i was wondering if the peaches would change anything? my mom makes peach soup a lot and i think it lasts a while, but i'm not totally sure.
