Specialty Butcher in Madison, WI

I live in Madison and I'm looking for a butcher who might work with me to do some custom cuts or might have more interesting selections than your average meat department at a grocery store. Any ideas?

Jim's Meat Market 1436 Northport Dr;
or the meat counter at Jenifer St. Market, 2038 Jenifer St.
would be the three places I'd suggest (depending on what side of town you're on...)
