Best Eggplant Parm Sandwich?

In my opinion, a good eggplant parm has fried to order, (not soggy) eggplant. Fresh mozzarella is always a nice touch. For anyone who has had it - my ideal sandwich is at the Goodfellas of Brooklyn and Staten Island. Where can I find this in the city?

While you can't eat there... I really like the eggplant parm at the Parisi Bakery on Elizabeth St. They also have these really great roasted red peppers which are marinated in fresh garlic that go really well on the sandwich if you choose to forgo the sauce.

From where I am it is too far for me to travel to at lunch. I'm not the original poster on the eggplant quest, I am happy enough with the eggplant closest to me at Parisi, and feel lucky it is so close to me. :)

Wow...wish I'd known about that sandwich when I lived in NYC! I absolutely love the combo of fried eggplant with roasted and marinated red pepper.

for future reference, the "Search" function here on Chowhound is incredibly useful. chances are, someone has already asked pretty much whatever question you can come up with...so you can typically find at least one or two answers on the boards already. at the very least you'll usually find a place to start.
