What makes tomato and basil non-refrigerator foods?

I think the title says it all; what exactly is it in tomato and basil that make them best at room temperature rather than in the fridge? And are there any other common foods for which we should follow that rule?

Thanks!

  1. I think cheese needs to be at room temperture to have full flavor.
