What to do with Chinese cucumbers?

A co-worker of my husband's sent him home with several home-grown Chinese cucumbers. Do I use these raw as other slicing cucumbers, or should they be cooked? Thanks for your ideas.

    Cut in half lengthwise, then into quarter inch sections and toss in a marinade of rice wine vinegar, diced garlic, salt and pepper, sugar and white pepper. Refrigerate overnight and garnish with a drizzle of sesame oil before serving.

      If so, you shouldn't cook them. Just slice and add to your fav salad. I use a mandoline.

      You can also do a quick brine and make a side dish. This is an easy & tasty Korean recipe that David Chang uses in one of his restaurants.

      You can drain the water that pools and add a bit of garlic and/or hot pepper flakes for additional flavor.
