This may not be the sort of answer you expected, but one option might be to find a place that already makes their own moz, and ask if they could do some burrata for you on special order. If I understand the process of making burrata, anybody who can do fresh moz ought to be able to do burrata, with a little practice.
You might get really fresh burrata out of the deal, and the vendor might discover that there's a market for a product they don't make now. Maybe if enough people ask, somebody might start doing it regularly on some sort of schedule, like one particular day every week, to test the waters.
