Healthy Meals in Minutes Recipe cards - cinnamon rolls
I' m looking for a cinnamon roll recipe from the Healthy Meals in Minutes cards. It doesn't seem to be the cinnamon rolls that are in the Breakfast or muffin section. I think it may have been one of the very first cards I received, kind of like a teaser set, where the company sends you the most scrumptious cards first so that you'll purchase the rest (which I did,and am glad). These rolls are very simple make; there's no yeast, no yogurt, to raisins, etc. Just flour, butter, milk - you spread a bunch of butter on the rolled out dough and sprinkle cinn./sugar mixture on top, roll up and cut. Does this sound familiar to anyone. I lost this card and it is the recipe I use every Christmas morning. Help, help! please! :)
I have a card #18 in the breakfast section, Easy morning coffee rolls... sounds familiar. The cinnamon rolls I have call for yogurt and rasins and stuff. but this one doesnt.. Maybe this is the one you are looking for? You roll it up and cut it. But it does call for pecans. Let me know at firstname.lastname@example.org and i will scan it in and send it for you.
Hi. I don't know if bettib will get this or not, but here goes. I saw the post you sent regarding cinnamon rolls and wondered if you could maybe help me out too? I have been searching high and low for my favourite recipe from the same collection. I could be wrong, but I believe it is called Stir Fry Vera cruise. It is a veggie dish containing corn, zucchini, black beans, hot sauce, tomatoes, mmmm! If you know of it could you send me some pointers on recreating it. I can't find a similar recipe anywhere. I'd be soooo greatful,
1 TEASP.OLIVE OIL
1 MED. YELLOW ONION (ABOUT 1 CUP CHOPPED)
2 SMALL ZUCCHINI DICED (ABOUT 2 CUPS)
1 PKG.(10 OUNCES) FROZEN WHOLE KERNEL CORN, THAWED
1 MEDIUM GREEN BELL PEPPER CHOPPED (ABOUT 1CUP)
6 MEDIUM PLUM TOMATOES, PEELED,SEEDED AND CHOPPED, OR 1 CAN (16 OUNCES) PLUM TOMATOES, DRAINED AND CHOPPED
1 CAN (15 OUNCES BLACK BEANS, DRAINED AND RINSED
1/2 TEASP. HOT PEPPER SAUCE
1 TABLESPOON CHOPPED FRESH CILANTRO
1. IN LARGE SKILLET HEAT OIL OVER MED HIGH HEAT ADD ONION SAUTE UNTIL SOFTENED ABOUT 2 MINUTES ADD ZUCCHINI CORN AND BELL PEPPER COOK STIRRING OCCASIONALLY FOR 5 MIN ADD TOMATOES COOK 2 MIN LONGER. 2. ADD BEANS AND HOT PEPPER SAUCE TO SKILLET. COVER SKILLET AND REDUCE HEAT TO MEDIUM LOW COOK VEGETABLE MIXTURE UNTIL HEATED THROUGH ABOUT 5 MINUTES REMOVE SKILLET AND SIR IN CILANTRO SERVE IMMEDIATELY
It sounds similar to this (paraphrased) recipe from "Company's Coming Muffins and More".
Jiffy Cinnamon Rolls
2 cups flour
2 Tbsp. sugar
4 tsp baking powder
1 tsp. salt
1/4 cup cold butter
Blend these ingredients together until crumbly, make well in center and add:
1 cup cold milk.
Mix dough, turn out of floured space and knead about 8-10 times.
Roll into 12" long recatangle about 1/3 inch thick.
1/3 cup butter
1 cup packed brown sugar
3 tsp. cinnamon
1/3 cup raisins or currants (optional)
Mix together first 3 ingredients, place 1 tsp. of filling in bottom of each of the 12 well sprayed or greased muffin tins. Spread the remaining filling on the recangle of dough and roll as a jelly roll. Mark, then cut roll into 12 even rolls and place cut side down in the muffin tins. Bake 375° for 18-20 min.
When cooked, turn out on rack to cool.
