I had this recently in the polenta with oxtail at ludobites and it was amazing. It looks like it's also on one of the flatbreads at Cache. Anyone know of any other dishes around town that incorporate this? Thanks in advance!
the classic dish is Aligot, (de Rouergue, in the Cevennes mountains) made with potatoes and tome de cantal (or tome d'auvergne as well).
I remember that Michel Richard would make it to order if you ordered it in advance. My guess is that it's a simple dish and if you have a place you like with a traditionally trained french chef, you could ask for it in advance.
