        <content>I just saw Andrea Nguyen's Vietnamese yogurt recipe, which calls for sweetened condensed milk.  http://www.vietworldkitchen.com/blog/2009/08/vietnamese-yogurt-recipe.html  

Holy moly that sounds decadent! 

I've had Vietnamese yogurt once before and thought it was amazing. I never guessed, though, that it was sweetened condensed milk that made it so delicious and distinct.  It never occurred to me that sweetened condensed milk was in there, or I certainly would have asked more about it. 

Anyway, has anyone tried this? Any challenges or tips I need to know?  I wonder if I could have success with the low-fat sweetened condensed milk...

      <content>I made the "whiteonricecouple" recipe and it's really good. I have a yogurt maker, so I finished the recipe in the electric heated yogurt maker instead of the water bath. Six hours of incubation is just about right for a well balanced sweet / sour combination. The Vietnamese yogurt set up well. I used regular sweetened condensed milk and 2% fresh milk. Don't allow the liquid to reach a heat over about 105-F or you will kill the yogurt starter.

The final product has a pleasant sweetness, but doesn't taste strongly of sweetened condensed milk, which I find to be a good thing.</content>
