Italian Ice Recipe?

Does anyone have a good chocolate Italian ice recipe? I remember getting the most delicious ices when I would visit family in NJ, but here in the South there is nothing even close. I thought I might try to make my own, but I don't really know where to start.

        This recipe is of the owner of Grom gelato ( http://www.grom.it/eng/index.php ). In Italy he gives his recipes on TV.
        It's very easy but it is essential that the doses (in grams) are respected to obtain a perfect balance.


        Ingredients for 5 persons:
        320g whole milk
        125g chocolate 70% cocoa
        45g of sugar cane white

        Bring the milk to boiling point, remove from the heat and add the chocolate and sugar. Let dissolve. Mix well with an immersion blender (it's essential to homogenize fats) . Allow to cool for a few hours and transfer into ice-cream-making machine, let it go for 25 '- 30'.
