Where can one purchase a whole guanciale?

    Salumeria Rosi on the UWS sells it, and I imagine they would have it "whole". Also try Di Palo.

          And, by the way, the pancetta at Salumeria Rosi is fabulous - almost as rich as guanciale, and, to boot, you can buy it in slices like bacon, which makes it much easier to use for cooking.

          Salumeria Biellese *only*sells the whole jowl, if I remember correctly, and they're making it themselves and I'd be stunned if it wasn't significantly cheaper than at Salumeria Rosi or the place in Grand Central. Salumeria Biellese's stuff is amazingly good, despite the look of the place.

            Murray's Salami in Grand Central sells whole La Quercia guanciale. I believe Salumeria Biellese sells whole guanciale as well.
