Seattle Fine Dining with Great Beer List?

NYC hounds are heading to Seattle as first timers on Labor Day weekend '09. Looking for a couple of foodie restaurant must visits -- ideally with beer lists to satisfy hop head hubby with a strong taste for IPAs and Belgian style beers. We will, of course, do local brewpubs, too, but I like to have a nice dinner or two on the itinerary. Thanks!

Quinn's isn't exactly upscale, but the food is certainly chow-worthy and the beer is great. Jolly Rodger taproom is local brew, and the food is really worth eating.
