How long will my potato salad dressing last?

I made dressing for my potato salad last weekend and made WAY too much.

All of the components would last on their own for an extended period of time. My question is, is the shelf-life (refrigerator-life) somehow shortened because they are now mixed together?

The ingredients are mayo, mustard, vinegar, pickles, sweet relish, sugar, salt, and pepper. I'd hate to throw it out unnecessarily, but I also don't want to take any chances.

  1. it'll last much longer than it would have if it was mixed with the potatoes! transfer it to a glass jar with a nice, tight lid, and it should be fine in the refrigerator for at least a couple of weeks - you've got plenty of preservatives in there.

    if at all in doubt, use the sniff test - you'll be able to tell if it spoils.

      i agree with the wise goodhealthgourmet!

      that might work on a batch of cabbage slaw, too, fyi -- if you want some variation. or make an egg salad.
