Food preservation classes

This is not restaurant related but pertains to food in N.O.
I'm interested in canning classes and other food preservation techniques.
Does anyone on the board know of workshops offered in NOLA?

      Check with your country extension service. In addition to master gardeners' classes, some have master food preservers also.
