        <content>I've soaked and cooked some borlotti beans.  I need a fresh idea for making them into a salad.  

I just had one with a lemon vinaigrette, tomato and roasted corn.  I think this time I want some thing with a balsamic vinaigrette.  But what veggies and crunchies to add?????

scallions
red and green peppers
frozen corn kernels 
finely chopped fresh green beans

(black eyed peas is you like 'em).
Salt and pepper to taste, a sprinkle of Italian herbs, and some fresh chopped cilantro or parsley.
 
For dressing, squeeze a lime or two, depending on how much you like  

Of course, it tastes best if done at least a couple of hours before eating.
 
Finally, cut up an avocado or two and add right before serving.
