I'm searching for a tasty crock pot recipe to make chili - either with pork or beef. Does anyone have any recipes that they can share?

I made a couple of really good beef ones in the crockpot, but it's been so long since I used a recipe for chili! Most of the time, I just use my dutch oven. And more recently I've used spice mixes, instead of trying to balance all the spices to get it to taste how I want. It ends up too tomatoey, w/out a strong hand with spice.

Brown ground beef first. I think I have also sauteed the vegs ahead too, since I use peppers, celery & onions, and they don't break down enough in the low heat. Then I stir the spices & salt in the browned meat & vegs, add tomatoes or sauce, and let cook. I think you should stir in beans at the end of cooking. And if it's watery, can uncover at the end of cooking and put on high to reduce a little, or stir in some masa flour mixed with water to thicken.

To follow-up, I made a delicious crock pot chili this past weekend, even though it is more of a cold weather food. I used this recipe loosely:http://www.foodnetwork.com/recipes/robin-miller/anitas-slow-cooked-chili-in-cheddar-bowls-recipe/index.html

I added yellow onions, cayenne, jalapeno and serrano peppers, hot sauce, red pepper flakes and chopped bacon (which were leftover from breakfast). I added plain stewed tomatoes and "Mexican" tomatoes (i.e. diced tomatoes with chilies). I didn't brown the beef first, but it ended up being delicious.

The highlight was ofcourse the cheddar bread bowls. The perfect weekend meal with very little prep!
