SInce your location is selling them in the freezer, I really don't understand why they can't do them fresh. The ones in the freezer are made in the store so they have everything they need on hand. I can only think of two reasons why you got that response - 1) There was no heated can of bonnet dip at the moment. Those cans can take a full day to reach dipping temperature and it's common for some idiot to forget to replace an empty can. or 2) The only person who knows how to make Bonnets properly wasn't working then. Seriously, those things are a pain to make properly and there can be a significant amount of waste when not done right. The owner may have gotten sick of the amount of lost product and said that only a certain worker is allowed to make them. I'm sure that doesn't help much but, yeah, what bagelman01 said.
