I have some pickled ginger in my fridge, and have NO idea how old it is and it never seems to go bad, does it?

I buy mine at a local Japanese market and they told me it lasts for about a month once it's opened. Maybe you could stretch that a bit but if your ginger has been in there for months on end I'd probably toss it.

Perfect for years, never goes bad.

Same experience as yours, Sam, but I did transfer it to a small glass jar since it came in a plastic one and some plastics are air-permeable enough that the food absorbs other fridge odors.

we always make sure to use a clean fork & it seems to live for ever in happiness.
(forever, so far, equates to 2 years for that jar)
