        <content>Hi!

I make dinner for my brother and I- a "eats with his eyes" type 1 diabetic kid whose dream meals include bk chicken fries, scooby doo fruit snacks and gallons of diet soda. I was just wondering if anybody has ideas for quick,easy food ideas/recipes I can make besides quesadillas and oven chicken- I lack a drivers license (laziness&gt;me) so basic ingredients are preferable.

      <content>4 chicken thighs  (or more - just increase the other quantities)
1+ tsp ground oregano 
salt and pepper 
couple of glugs of olive oil 
juice of 1 lemon
Preheat oven to 400 degrees.
Wash chicken well and pat dry. Mix oregano with salt and pepper and rub all over the chicken. Grease a 9 x 13" baking dish.
Whisk the oil and lemon juice together in a small bowl and drizzle half over the chicken. Bake for 15 minutes. Turn the chicken pieces over and drizzle with the remaining oil + lemon mixture. Bake for another 15 to 20 minutes ot till cooked through. Serve warm, cold or at room temperature.  Great for leftovers too.  You could make some steamed rice to go with this or any other vegetable you both like.


Here's another: 
olive oil 
1 cup dry  macaroni ir your choice.
1 lb ground low fat turkey
28 oz low-sodium marinara sauce (or make your own) 
10 oz frozen spinach, chopped
Drizzle the oil into a 12" or larger  skillet . 
Add all ingredients and stir gently until well mixed.  Bring to a boil. 
Reduce heat to a low boil/simmer and cover pan. Cook gently for 15 to 20 minutes or until pasta is tender, stirring every so often..  A nice tossed salad goes well with this.

      <content>Ground beef recipes are easy.  Cook &amp; drain fat first, then sauce or season and use for tacos, spaghetti, sloppy joes, cooked elbows, mac &amp; cheese.  Ground turkey works equally well.  Top with mashed potatoes and it's shepherd's pie.  Layer with lasagne noodles and cheese for skillet lasagne.

Chicken can also be cut in strips and sauteed with vegetables to wrap in tortillas like fajitas.  Or cut into chunks and stir fried with vegs and a stir fry sauce (comes in a bottle or powder, sometimes) and serve with rice.  

Tuna can be used in casseroles with noodles, and into salad with tomato &amp; cheese &amp; broiled on an english muffin, a melt.

Frozen fish fillets and sticks are also decent alternatives if fresh fish is too expensive or unavailable.

Don't know if he has particular diet restrictions, but hope this helps!
