im up for anything tonight. taking out my cousin from out of town.
what are some late night eateries. around fountain valley if possible.

I am not sure how late you mean by late night dining, but if you like Japanese then I would suggest Kappo Honda. I think it stayed open until 12:30 or 1am.
It is an casual restaurant serving authentic kappo dishes.

Across the street is Shin Sen Gumi, for yakitori or ramen, open until 11:30
Tsuruhashi, my favorite yakiniku in OC, is open til 1:00, I think, and is also just down brookhurst
If you're out real late, you can always hit up Alerto's for mexican fast food 24/7

if garden grove is close enough then past memories (min sok chon) for a korean drinking place...get the fried chicken, bcd is 24 hours for spicy tofu soup also on gg blvd.
