Shane Greenwood Jul 15, 2009 09:30 PM

He isn't saying what his plans are but hinted that it could be out of the area. Here's the story:

I'm sure he's getting offers from all over the place. Winning a James Beard Award will do that I guess. A16 and SPQR are promoting from within and the article mentions that they are going to tweak SPQR. We'll have to keep an eye on these places. It's hard to imagine them getting better, but hopefully they can maintain.

A16 will be fine. Liza Shaw has been cooking there since Christophe Hille opened the restaurant. A16 did not decline when Hille left and will not decline with Appleman leaving because Shaw's steady hand has been there throughout. Appleman has not really overseen or cooked at A16 for nearly two years according to a friend's room mate who works there. So A16 will stay the same. According to my friend, Tokyo is still happening but it is a joint venture with a Japanese company and the remaining partners.

SPQR is a different story. The food was never as consistent and always seemed to be shakier. I hope it can turn itself around.
