I am looking for information on caterers who will provide appetizers for about 100 guests. We are also having a taco cart, so we do not need too many and would like to spend between $1000-1200. I am having difficulty with many catering places saying that is too little to spend and am looking for suggestions.

what are you looking for? What about some ceviche from the new place in Mar Vista? It would go with the mexican theme. Chente Mars I think is the name. maybe some queso fundido or some guacamole.

i don't see that particular dish working well as a 'stand-up' dish.
it's the type of dish i see serving to folks who are sitting down at a table who have silverware with which to work.

something not-too-saucy (more dryish), something that lends itself to be eaten with the hands instead of requiring silverware, would be more my recommendation.
