Has anyone used Tojiro Senkou knives? I'm starting to replace my knives one by one and I came across this brand - sounds interesting.

I've heard they're very good. I think they're the same blade as a regular tojiro, but the handle is fitted better. Heston Blumenthal endorses that specific range iirc, but as a result the price has increased massively in the UK

Of the new Tojiro knives I like the look of the Shippu line. Traditional Japanese handles and blade shapes.

I have a Tojiro DP gyutou. Highly recommended.
