Adzuki beans - any savoury dishes to use them up in?
I use them in a recipe I got from an Indian Ayurvedic cookbook:
1. pressure cook beans, adding a stick of kombu (seaweed) for flavor
2. warm onion, garlic, & grated ginger in oil (although recipe calls for ghee)
3. add beans with some of their liquid and simmer
4. stir in 1 Tbs tamari before serving
Good with rice & steamed kale on the side.
