They might do a cooked or raw preparation, but I haven't seen it done that way (yet). I've eaten "red" and "green" sea urchin (Atlantic v. Pacific or vice versa) simply raw, presented in the shell. Their online menu won't list it, since it depends on what fresh fish and shellfish they receive/order that day/week.
You might want to call them to ask if they have sea urchin that day to be certain because out of the few times I've been over the course of two to three years, I've only seen it available once.
