Feel free to give me your thoughts. I have done a bit of research and believe these places will be open during my stay in August. I would like to try lobster rolls at Spring as well but seems tough to get in.

Saturday lunch at Spring is no reservations. You need to reserve your lobster, but from that point it's first come, first seated.

Late night dinner on Aug 6 by Eiffel tower: Au Dernier Métro. Chez Joséphine is open mon-fri so Sat, Aug 8 won't work. La Fontaine de Mars would, for example. It looks like a good plan on the whole, if you have a solid stomach (eg portions at Joséphine are gigantic).
