I humbly submit:

BEETS AND CARAMELIZED ONIONS WITH FETA
This dish is a particularly good accompaniment to beef or lamb. And it is the most fantabulous beet dish ever created.

What:
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1/4 teaspoon black pepper
3/4 teaspoon salt
3 tablespoons olive oil
1 lb onions (2 medium), cut 4 by 4
1 teaspoon sugar
2 (15-oz) cans small whole beets, drained and quartered (or halved if very small)
3 oz crumbled feta (1/2 cup)
1/4 cup toasted pine nuts (1 oz), or more
How:
Whisk together vinegar, mustard, pepper, and 1/2 teaspoon salt in a large bowl, then add 2 tablespoons oil in a slow stream, whisking until combined well.
Cook onions with remaining 1/4 teaspoon salt and sugar in remaining 1 tablespoons oil and Pam in a 12-inch heavy skillet over moderate heat, stirring occasionally, until golden brown, 18 to 20 minutes. Add onions pinenuts and beets to dressing, stirring gently to combine. Serve sprinkled with cheese,

Makes 4 servings.

I roast my beets from the garden and add way more pinenuts. I am a beet salad PIG!

  1. I have the morning off, I'm trying the recipe, yes actually following a recipe. Unusual for me, but I love the flavor and feta. I LOVE beets, the golden is my favorite these days. I make a salad with the golden, red and purple, goat cheese, onion and arugula and everyone goes nuts. HOW easy but still just so good. I eat 3 or 4 just sliced with evoo, s/p as a side all the time.

    I'll have some for lunch, but take some to the lady I cook for as well. And the rest is all mine. I'll let you know how they come out tomorrow.

    1. Sal Vanilla, thanks for the recipe, I love, love love beets, and especially with feta in a salad. I have a roast beet salad with blue cheese and walnuts that is awesome. no pine nuts, otherwise you could make it with your kind of dressing and give that a shot.

        You know, I love that combo too. I wonder if nuts, beets, cheese is just the new holy trinity of root veggies.

      2. Love the mustard with the beets. Nice simple recipe. I use balsamic all the time, but loved the added dijon. I did add some fresh dill and also a shallot thin sliced. Nice flavor. Thx

        1. This sounds absolutely amazing. I must try it with the beets I've got in the garden. I wonder if some sauteed beet greens would work as an addition...no hurt in trying I guess!

            I too love roasted baby beets. I can eat them every single day. I've been slicing them up, and adding a dressing made with olive oil and dijon mustard with a little vinegar. So good. Throw a little chiffionade of basil in there, and even better.

            1. I had at a restaurant a month a two ago a roasted beet, onion and mushroom salad served over arugula If I remember correctly, Then it had some fresh goat cheese and also roasted asparagus and topped with a poached egg. I haven't yet try to recreate it but it was very very good.

              1. Here is a twist I made once and I loved it and got great reviews but the guy I was dating hated it. Oh well.

                You know salad on a pizza. A great way to serve a salad is on a thin pizza crust which I love.
                Well I bought some fresh crust from a local vendor which was easier. Then I topped it with spinach drizzled with olive oil, balsamic and s/p, then topped with roasted onions, beets and onions in a light vinaigrette and topped with goat cheese and baked. Cut in slices. It isn't that unique, but a simple fresh way to serve a salad especially for summer dining. A nice sliced pork loin or sliced beef on the side makes for a simple side dish.
