I have been looking for this for years...got a Beignet mix (many) from Cafe du Monde in New Orleans and it calls for this type of oil...became a joke after while as it was impossible to find. Even when in Memphis which is considered the South, could not find at a Kroger. My latest quest is Cane Syrup for a Memphis BBQ recipe, no luck so far.

Most U.S. syrups have gone to corn-fructose because of subsidies.

I'm quite sure you can find cane syrup at natural food stores, including Whole Foods.

As for the cottonseed oil for the beignet mix, I doubt that the type of oil is critical; any netural oil would likely be fine. (I've written recipes calling for extra virgin olive oil and/or grapeseed oil, but the use of one of these particular oils is rarely crucial for the success of the recipe.)

Frankly, I'd be nervous about using cottonseed oil in large amounts: it's a by-product of a plant that, as a non-food product, is not subject to much regulation regarding pesticide use.

Agreed however for cooking at high degree temp's i.e my fried turkey, limited oils will do the trick. Best being peanut but $$$ and a few more &&&'s I'm just say'in :) I did it once but then some people were all like oh peanut oil what about allergies. I mean C'mon guy, nut up

Though not all peanut oil is safe for people with peanut allergies. Cold-pressed, for instance, not so much. The oil could also be contaminated with protein. And, given the "Italian EVOO" mixed with Turkish hazelnut oil thing, I don't think I'd risk death for it.

I've heard it described as a non food oil. That would be similar to mineral oil.
You would have to check the label to see if trans fats are zero or higher. Most oils have eliminated partially hydrogenated from the mix, but I don't know about cottonseed oils.
