        <content>We took advantage of the no corkage promotion at Cava on Sundays.  I don't have a problem with "the insane wine gouging of 3 to 1 mark ups" in restaurants (BTW Cava seems to be closer to 2-2.5 to 1 and much less on higher priced bottles), much like I don't have a problem with similar mark ups with clothing or other goods.  But we had some special bottles to share with friends and there were dishes on Cava's menu which I thought would pair well.  
Service was top notch.  Our server decanted the appropriate wines and recommended chilling certain wines.  Cava has a special chilling machine, I guess wine mark ups help cover these costs along with glassware, staff training etc.
Both Chris McDonald and Doug Penfold were seen at the restaurant, which is nice to see on a Sunday night.  The food was consistenly good, some dishes were excellent.  We had the pea soup, oysters, asparagus, salt cod, monkfish, sweetbreads, charcuteria, corn tamal, poached foie gras, beef short ribs, skirt steak, cheese plate and chocolate cake.  Stand out dishes were the pea soup, sweetbreads, skirt steak, charcuteria (one of the best in the city), and foie gras.
Five of us walked away very full and the total was $320 before tip.  I calculated what the bill would have been with the wines, and tipped on that amount.  
We all had a great time and I can see why the restaurant was busy on a Sunday night.  I highly reccomend this place.</content>
