Live sea urchins, Ranch 99, Edmonds, Wa
So I was at Ranch 99, Edmonds, Wa on Sunday, They had live sea urchins. I really wanted to buy a few, but I just did not know what to look for or what to do with them. Of course, I was hoping for some Uni.....
The urchins were not in water, and sitting out in the open.
So I was not sure if they were in good condition or not.
Would like to know what to look for, for the live urchins, just in case I run into them again in the near future.
Also, would like help on WHAT to do with the urchins, ...transportation, storage until use, how to look for Uni, etc, etc, etc.

I was in somewhat the same boat regarding razor clams at HMart. I bought 4 (less than $5), fried them briefly in the shell, and proceeded to eat - and found a lot of grit. After the fact I dug out an old book on Washington's Clams/Crabs/Shellfish. Most of the book is about the laws and accessible beaches, but it does have some about preparing the items. In the case of razor clams it said to cut them out of the shelf, snip off various parts, and then slice them open to clean out the sand.
Regarding sea urchins it just says: "When the shell is broken open the edible portion is the orange part."
Were they marked as live, or just whole?
