  1. Maria's Feta Sauce with Shrimp, Melon, and Tomato, p. 336

    This is a colorful, easy dish that was perfect for a weekday meal on a hot summer night - skewered shrimp seasoned simply with s&p and olive oil, and watermelon and summer tomatoes are garnished with fresh oregano and served with a spicy feta dipping sauce. I had to make do with grocery store-brand feta, so added more water and extra virgin olive to make it creamy, and used spicy locally-grown Padron peppers instead of jalapenos. Chunks of fresh yellow watermelon and tomatoes from the farmers market were especially good dunked in the feta sauce. It's a very simple dish, so quality of ingredients is key.
