Houston - Breakfast?

We will be arriving into IAH very early Saturday morning and heading North on Hwy 59 - would LOVE a great breakfast place. Maybe huevos rancheros or some killer pancakes.

Any suggestions? Thanks. I'm a displaced (vegetarian) Texan but do not know the Houston area.

Since you'll be going north from IAH, the place that immediately comes to mind is Humble Street Cafe which has good pancakes and is an interesting nonchain local place. It's probably 3-5 mins off 59.
