vegetable cooking challenge
so I have a lot of mushrooms (baby bellas) and turnips and am looking to make a vegetarian meal with both together. Any ideas?
I also have broccoli, carrots, onion, garlic, pasta, rice, quinoa, cheese, eggs, chicken stock, all sorts of condiments & spices.
In all fairness, I abhore turnips. But with the rest of your ingredients, I see the makings of a great stir-fry or risotto or quinoa pilaf.
depending on the type of cheese you have, i'd make a gratin with the turnips, and a frittata with the eggs, broccoli & mushrooms (and perhaps cheese, again, depending on the variety).
the quinoa would also be great tossed with sauteed, chopped mushrooms & broccoli, and even better if you have feta or mozzarella to crumble/dice & fold in.
