Peach Recipes, Anyone?

Any really good and/or unusual recipes for these summer beauties that are in season right now? I picked some up at a farmers' market on Wednesday and made this super-simple cobble last night.

I'm particularly interested in finding a stellar peach dumpling recipe.

  1. Not dumplings, but good ol' Martha Stewart has a great recipe for peach or nectarine upside down cake baked in a cast iron skillet. Pretty durned good. adam

      I generally love Martha's recipes, so I look this one up.

    2. I love this tart. The peach-almond combo is a natural. It's very easy (of course, I make a homemade crust). I don't peel the peaches, but I don't mind the skins since they are raw.

      I've used the base with other fruits that pair well with almonds, too. Poached pears, strawberries, and I once did raspberries, with a layer of ganache over the almond filling in place of jam.

        That looks good AND easy. I like the idea of peaches and almonds.
