Sansui is our choice for sushi.
There are lots of competent sushi bars in the Triangle. But when a master sushi maker shows up, it's thrilling to see and taste. That's what Mike brings to Sansui in Durham. He knows what he's doing. Fish is fresh and beautifully presented. Quality of fish is superb. Classic sushi like salmon eggs comes with quail eggs separated by a delicate slice of avocado which adds color and taste. Balance of rice and fish in sushi allows the fresh fish to shine. When we've been there, we enjoyed fresh crab instead of the ubiquitous crab sticks, fresh shiso leaves with cucumber in a roll that took us back to LA in the 80s, wonderful salmon, yellowtail, octopus and mackerel. Sashimi platters are reasonably priced and beautifully presented. There is an Opening Special bento box I'd like to try sometime soon.
There's a true sushi artist at work at Sansui. I hope he gets enought support from Triangle sushi fans to stay.
