I used to buy steaks routinely at Costco, loving the tender, but tasty consistency. Recently I noticed they were carrying Prime Meat for a slightly higher price, natch. Tried to stick with my usual steaks, but found they weren't at all as tender.

Is it possible that they were selling Prime Grade before, but are now carrying both Prime and Choice? Or, was there a mid-grade they had before, technically "Choice", but actually top-end choice, or nearly Prime?

Anyone know about this?

IMHO the prime beef that is now sold at some costcos is more tender and better marbled than any "choice" beef i have ever purchased there.

As with any grade or cut, I look at the marbling through out the cut. I would consider rib-eye or strip sirloin as a good candidate in the prime grade, IMO better flavor and more tender. Remember grading is the opinion of the inspector but, marbling tells the story. Either way Costco meat prices are excellent.
