Great food wedding venues in the Hudson Valley?

I am recently engaged and am originally from Kingston, NY. New York City is out of our budget for a wedding and I have always loved the beauty of the Hudson Valley.

Our priority is to have great food and great music at our wedding (and, of course, a lively ambiance), and we would like to know if you have any suggestions for places located anywhere between NYC and Albany. We are looking to keep the price of this wedding within a modest budget.

And, if there are bed and breakfasts nearby, as well as fun local things to do, like tubing down the Esopus, all the better!
