How long do artichokes last?
I've had a fresh whole artichoke in my fridge for a few weeks. it looks fine, but I'm wondering if I can eat it or if I should just toss it. In the past, I've stored them for about two weeks with no problems, but this one's been around for three or four weeks.
Any thoughts, suggestions or guidelines? I love artichokes, so I'd hate to throw it out!
Actually they last a good bit of time, when the leaves start opening, its really more than time to eat it. If you can't eat it right away, still cook it and eat it later. Just microwave it and eat with your favorite aioli or butter etc...
I would trim it up, the bottom and the leaves, then soak in a nice cold lemon bath for an hour or so, then cook as usual.
On and don't worry if they get dark spots, they are harmless.
